This hearty ground turkey with potatoes is a quick, comforting, and budget-friendly dinner that comes together in just 30 minutes. Tender potatoes, juicy ground turkey, and simple pantry staples make this a family favorite for busy weeknights.

  • 1 lb (450 g) ground turkey (preferably 93% lean)
  • 3 medium potatoes (about 1.5 lb / 680 g), diced (Yukon gold or red preferred)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 large bell pepper, diced (red preferred)
  • 2 tablespoons olive oil, divided
  • 1/2 cup (120 ml) chicken broth (or water)
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • Optional: 1/2 cup (60 g) shredded cheese (cheddar or Monterey jack), for topping
  • Optional: Chopped parsley or green onion, for garnish
  • Optional: Red pepper flakes, for heat

Instructions

  1. Wash and dice potatoes into small, bite-sized cubes (about 1/2-inch). Chop the onion and bell pepper. Mince the garlic.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up with a spoon. Season with half the salt and pepper. Cook until mostly browned, about 4-5 minutes. Remove turkey to a plate.
  3. Add remaining tablespoon olive oil to the skillet. Add diced potatoes and sprinkle with remaining salt and pepper. Sauté, stirring every minute or so, until potatoes start to turn golden and crispy on the edges, about 6-8 minutes. Loosen with a splash of broth if they stick.
  4. Stir in chopped onion, bell pepper, and minced garlic. Cook until veggies are soft and fragrant, about 3-4 minutes. Add more oil or broth if pan gets too dry.
  5. Return browned turkey to the skillet. Sprinkle in smoked paprika and oregano. Pour in chicken broth. Stir well, scraping up any browned bits from the bottom. Reduce heat to medium-low, cover, and simmer for 7-10 minutes, or until potatoes are fork-tender. Stir once or twice to prevent sticking.
  6. If using cheese, sprinkle over the top during the last 2 minutes and let it melt under the lid.
  7. Taste and adjust seasoning. Scatter chopped parsley or green onions on top before serving. Add red pepper flakes if desired.

Notes

For crispier potatoes, uncover the skillet for the last couple of minutes and turn up the heat slightly. Cut potatoes evenly for best results. Add extra veggies like peas, carrots, or zucchini if desired. The dish is naturally gluten-free; double-check broth and spices if needed. For dairy-free, skip the cheese topping. Leftovers keep well in the fridge for up to 4 days and reheat easily.
