  • 8 thinly sliced turkey breast slices (preferably nitrate-free, low-sodium)
  • ½ cup hummus (garlic-lemon flavor recommended)
  • 1 cup baby spinach leaves (optional)
  • ½ cup shredded carrots
  • 2 medium apples (Fuji or Honeycrisp)
  • 1 cup celery sticks
  • 1 cup cherry tomatoes
  • 1 cup whole grain crackers or pita chips (optional)
  • A handful of nuts or seeds (almonds, pumpkin seeds) – optional
  • Extra hummus for dipping (optional)

Instructions

  1. Wash and dry 2 medium apples. Core and thinly slice into ¼ inch (6 mm) rounds or wedges. Toss slices briefly in lemon juice to prevent browning and set aside.
  2. Rinse and dry 1 cup baby spinach, ½ cup shredded carrots, 1 cup celery sticks, and 1 cup cherry tomatoes. Pat dry to avoid excess moisture.
  3. Place about 8 thin turkey breast slices on a board or plate. Cut in halves if slices are large for easier rolling.
  4. Spread about 1 tablespoon of hummus evenly onto each turkey slice. Layer a few baby spinach leaves and some shredded carrot on top. Roll each slice tightly into a cigar shape and secure with a toothpick if needed.
  5. Arrange the hummus turkey roll-ups on one section of the serving board. Fan out apple slices nearby. Add celery sticks, cherry tomatoes, and crackers or pita chips in separate bunches.
  6. Add a small bowl of extra hummus for dipping and scatter nuts or seeds around the board if desired.
  7. Check that everything looks fresh and vibrant. Serve immediately for best texture and flavor.

Notes

Use lemon juice to prevent apple slices from browning. Assemble turkey roll-ups just before serving to avoid sogginess. Use gluten-free crackers or omit crackers for gluten-free diet. Substitute turkey with roasted vegetables or cheese for vegetarian option. Keep knives sharp for clean apple slices.
