Hearty One-Pot Sausage White Bean Kale Soup

A warm and filling one-pot soup combining savory Italian sausage, creamy cannellini beans, and fresh kale for a cozy, comforting meal that’s quick and easy to prepare.

Ingredients

  • 1 pound Italian sausage, casings removed (sweet or mild)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 large garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups low sodium chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups chopped kale, tough stems removed
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare your ingredients: chop the onion, carrots, celery, and kale; mince the garlic; drain and rinse the cannellini beans.
  2. Heat 2 tablespoons olive oil in a large heavy-bottomed pot over medium-high heat. Add the sausage, breaking it up with a spoon. Cook for 6–8 minutes until browned and cooked through. Remove sausage with a slotted spoon and set aside, leaving fat in the pot.
  3. Reduce heat to medium. Add chopped onion, carrots, and celery. Cook, stirring occasionally, for about 5 minutes until softened but not browned. Add minced garlic and cook for another minute until fragrant.
  4. Pour in about 1/2 cup (120 ml) chicken broth to deglaze the pot, scraping up browned bits from the bottom.
  5. Add the remaining chicken broth and rinsed cannellini beans. Stir in dried thyme, red pepper flakes, salt, and pepper. Bring to a gentle simmer.
  6. Simmer uncovered for 20 minutes to meld flavors and soften vegetables.
  7. Stir in chopped kale and browned sausage. Continue simmering for 5–7 minutes until kale is tender but still bright green.
  8. Remove from heat and stir in 1 tablespoon fresh lemon juice. Taste and adjust seasoning if needed.
  9. Ladle soup into bowls and serve immediately with crusty bread or your favorite side.

Notes

Brown the sausage patiently to develop caramelized flavor. Add kale late in cooking to keep it vibrant and tender. Deglaze the pot to incorporate flavorful browned bits. Rinse canned beans to avoid cloudy, salty broth. Adjust seasoning gradually.
