Ingredients

Scale
  • 2 pounds beef sirloin or stew meat, cut into 1-inch cubes
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional but recommended)
  • 4 tablespoons unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian herbs (or fresh parsley)
  • 1/2 cup low-sodium beef broth
  • 1/4 teaspoon crushed red pepper flakes (optional, for spice)
  • 2 cups mushrooms, quartered (optional)
  • 1 small onion, diced (optional)

Instructions

  1. Trim excess fat from the beef and cut into 1-inch cubes. Pat dry with paper towels.
  2. In a large bowl, toss beef cubes with kosher salt, black pepper, and smoked paprika until evenly coated. Let sit while preparing the sauce.
  3. In a small mixing bowl, combine melted butter, minced garlic, Worcestershire sauce, Italian herbs, and beef broth. Mix until well combined.
  4. Add seasoned beef cubes to the bottom of the slow cooker. Layer mushrooms and onion on top if using. Pour garlic butter sauce evenly over everything.
  5. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until beef is fork-tender and sauce is bubbling.
  6. If beef seems dry, add a splash more broth during cooking. For extra richness, stir in another tablespoon of butter during the last 30 minutes.
  7. Once cooked, use tongs to gently toss beef bites in the sauce. Taste and adjust seasoning as needed.
  8. Serve beef bites with a slotted spoon, spooning extra sauce over the top. Garnish with fresh parsley or chives if desired.

Notes

For best results, use well-marbled beef like sirloin. Searing the beef before slow cooking adds extra flavor. Fresh garlic is recommended for the best taste. If the sauce is too thin, thicken with a cornstarch slurry during the last 15 minutes. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
