A quick and flavorful one-pan dinner combining tender chicken, sweet honey, smoky BBQ sauce, and perfectly seasoned rice. Minimal cleanup and maximum taste!

  • 1 lb boneless, skinless chicken breasts or thighs, cubed
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 cup long-grain white rice or jasmine rice
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cube the chicken, mince the garlic, dice the onion, and measure out the rice, broth, and seasonings.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken cubes, season with salt and pepper, and cook for 5-6 minutes until lightly browned. Remove from the pan and set aside.
  3. In the same skillet, add the onion and garlic. Sauté for 2-3 minutes until fragrant and translucent.
  4. Stir in the rice, ensuring it’s coated with the flavors from the pan. Pour in the chicken broth and bring to a simmer.
  5. Return the chicken to the skillet, then pour in the BBQ sauce and honey. Stir to combine.
  6. Reduce the heat to low, cover the skillet, and let it cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  7. Once cooked, fluff the rice with a fork and check for seasoning. Garnish with fresh parsley if desired.

Notes

Use chicken thighs for extra juiciness. Rinse the rice before cooking to remove excess starch. If the rice is sticking or drying out, add an extra splash of broth and stir gently.
