  • 4 cups broccoli florets (about 1 large head, fresh or thawed frozen)
  • 4 large garlic cloves, minced
  • 1 tablespoon fresh ginger root, grated
  • 2 green onions, sliced (plus more for garnish, optional)
  • 1/4 cup honey
  • 1/3 cup low sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 teaspoon sesame oil
  • Cooked rice or cauliflower rice, for serving (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. In a separate dish, dissolve cornstarch in water to make a slurry. Set both aside.
  2. Wash and chop broccoli into bite-sized florets. Mince garlic, grate ginger, and slice green onions for garnish.
  3. Heat a large skillet over medium-high heat. Add ground beef and break it up with a spoon or spatula. Cook for 5-6 minutes, stirring often, until browned and starting to crisp. Drain excess fat, leaving a little for flavor.
  4. Reduce heat to medium. Add minced garlic and grated ginger to the beef. Cook for 1 minute, stirring constantly, until fragrant.
  5. Add broccoli florets to the pan. Stir to coat with beef and aromatics. Cook for 3-4 minutes, until broccoli is bright green and starting to soften. For extra tender broccoli, cover the pan for 1-2 minutes to steam.
  6. Stir the sauce and pour it over the beef and broccoli. Raise heat to medium-high and stir well to coat everything.
  7. Drizzle in the cornstarch slurry, stirring constantly. Cook for 2-3 minutes until the sauce thickens and becomes glossy. Add a splash of water if too thick, or simmer longer if too thin.
  8. Turn off the heat. Taste and adjust seasoning if needed. Sprinkle with sliced green onions and sesame seeds.
  9. Serve immediately over hot rice, cauliflower rice, or in bowls. Drizzle with extra honey if desired.

Notes

For gluten-free, use tamari or coconut aminos instead of soy sauce. Swap ground beef for turkey, chicken, or plant-based crumbles as desired. Add extra veggies like bell peppers or snap peas for variety. Prep all ingredients before cooking, as the stir-fry comes together quickly. Leftovers keep well for up to 3 days in the fridge.
