  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper or foil for easy cleanup.
  2. Peel and cube the sweet potatoes into bite-sized pieces, ensuring uniform cubes for even cooking.
  3. In a small mixing bowl, whisk together honey, minced garlic, olive oil, soy sauce, salt, and black pepper. Taste and adjust seasoning if needed.
  4. Place the sweet potato cubes in a large bowl. Pour half of the honey garlic glaze over them and toss until well-coated.
  5. Spread the sweet potatoes out on the sheet pan in a single layer. Roast in the preheated oven for 20 minutes.
  6. While the sweet potatoes are roasting, slice the sausage into 1/2-inch rounds.
  7. After 20 minutes, remove the sheet pan from the oven and scatter the sausage pieces among the sweet potatoes. Drizzle the remaining honey garlic glaze over everything.
  8. Return the sheet pan to the oven and roast for another 15-20 minutes, or until the sweet potatoes are caramelized and fork-tender, and the sausage is golden and slightly crispy.
  9. Remove the pan from the oven, sprinkle chopped parsley on top for freshness, and serve warm.
