  • 3 large sweet potatoes, peeled and sliced into rounds
  • 23 medium apples, peeled and sliced (Honeycrisp or Granny Smith)
  • 1/4 cup honey
  • 3 tablespoons butter, melted
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup pecans, roughly chopped
  • Optional: A handful of dried cranberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into 1/4-inch rounds. Place them in a large mixing bowl.
  3. Peel and slice the apples into thin wedges. Keep them separate for now.
  4. In a small bowl, whisk together melted butter, honey, cinnamon, nutmeg, vanilla extract, and a pinch of salt. Taste and adjust the sweetness or spices if needed.
  5. Grease an 8×8-inch baking dish with butter or cooking spray. Layer half the sweet potato slices, followed by half the apple slices. Repeat with the remaining sweet potatoes and apples.
  6. Pour the honey glaze evenly over the layers of sweet potatoes and apples, ensuring it coats everything nicely.
  7. Sprinkle the chopped pecans (and optional dried cranberries) over the top of the casserole.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15-20 minutes, or until the sweet potatoes are fork-tender and the apples are caramelized.
  9. Let the casserole cool for about 5-10 minutes before serving.
