  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup packed brown sugar (light or dark, depending on your preference)
  • ¼ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup packed brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter, melted
  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract
  • Optional: A pinch of cinnamon for extra flavor

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter, brown sugar, and granulated sugar until creamy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. In a small bowl, mix the brown sugar, cinnamon, and melted butter until combined to make the filling.
  7. Scoop out dough (about 2 tablespoons per cookie) and flatten it slightly.
  8. Add about ½ teaspoon of the filling in the center. Fold the dough over the filling and roll into a ball, ensuring the filling is sealed inside.
  9. Place the cookies on the prepared baking sheets, leaving about 2 inches between each.
  10. Bake for 10–12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. While the cookies cool, whisk together the powdered sugar, milk, and vanilla extract until smooth to make the glaze.
  12. Drizzle the glaze over the cooled cookies.
