  • 1 onion, finely diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 2 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 tsp hot sauce (optional)
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 burger buns

Instructions

  1. Dice the onion, bell pepper, and garlic. Set them aside.
  2. Heat a large skillet over medium heat. Add a drizzle of oil, then toss in the ground chicken. Cook for 5-7 minutes, breaking it up with a wooden spoon until browned and no longer pink.
  3. Stir in the diced onion, bell pepper, and garlic. Cook for another 3-4 minutes, until softened.
  4. Sprinkle in the Cajun seasoning and stir well to coat the chicken and veggies. Let it cook for 1 minute to release the spices’ aroma.
  5. Add the tomato paste, chicken broth, brown sugar, Worcestershire sauce, and hot sauce (if using). Stir until everything is well combined.
  6. Lower the heat to medium-low, and let the mixture simmer for 5-7 minutes. The sauce should thicken and coat the chicken beautifully.
  7. While the sauce simmers, toast the burger buns lightly on a griddle or in a toaster for extra sturdiness.
  8. Spoon the Cajun chicken mixture onto the toasted buns. Serve hot.
