Instructions

  1. Preheat your oven to 325°F (165°C). In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a lined 9×13-inch baking pan. Bake for 8-10 minutes, then let it cool slightly.
  2. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the cheesecake mixture evenly over the cooled crust.
  3. In another bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg until well coated. Spread the apple mixture evenly over the cheesecake layer.
  4. In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and salt. Stir in the melted butter until the mixture becomes crumbly. Sprinkle the streusel evenly over the apple layer.
  5. Place the pan in the oven and bake for 40-45 minutes or until the center is set and the topping is golden brown. Let it cool for at least 1 hour on a wire rack, then refrigerate for 2-3 hours or overnight.
  6. Once the bars are fully chilled and set, remove them from the pan and cut them into squares. Drizzle caramel sauce generously over each piece. Serve and enjoy!
