Ingredients

  • 1 cup oat flour
  • 1/2 cup vanilla or chocolate protein powder
  • 1/2 cup nut butter (peanut butter or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 23 tablespoons milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the oat flour and protein powder. Stir to mix evenly.
  2. Add the nut butter, honey or maple syrup, and vanilla extract. Use a wooden spoon to mix until the dough starts to come together.
  3. Slowly add the milk, one tablespoon at a time, and mix until the dough is soft but not sticky. Adjust the liquid as needed.
  4. Fold in the mini chocolate chips and a pinch of salt. Mix until evenly distributed.
  5. Using a cookie scoop or tablespoon, scoop out portions of the dough and roll them into balls with your hands.
  6. Place the balls on a plate or tray and refrigerate for at least 30 minutes to firm up.
  7. Transfer the protein balls to a storage container and keep them in the fridge for up to a week.
