Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) all-purpose flour
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (90g) semi-sweet chocolate chips
  • Chocolate squares or truffles for the molten center

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, cream together 1/2 cup (115g) unsalted butter, 3/4 cup (150g) brown sugar, and 1/4 cup (50g) granulated sugar until light and fluffy. This should take about 2-3 minutes.
  3. Add 2 large eggs and 1 teaspoon vanilla extract to the mixture. Beat until fully incorporated.
  4. In a separate bowl, whisk together 1 1/4 cups (155g) all-purpose flour, 1/3 cup (40g) cocoa powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing to keep the cookies tender.
  6. Fold in 1/2 cup (90g) semi-sweet chocolate chips.
  7. Chill the dough in the refrigerator for 15-20 minutes to make it easier to handle.
  8. Once chilled, scoop about 2 tablespoons of dough and flatten it slightly in your palm. Place a square of chocolate or truffle in the center, then wrap the dough around it, ensuring the chocolate is fully enclosed.
  9. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes or until the edges are set but the centers are still soft. Don’t overbake—they’ll firm up as they cool.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  12. Enjoy these cookies warm for the ultimate gooey center experience!
