A classic American Cobb salad featuring fresh greens, crispy bacon, diced chicken, and a tangy creamy blue cheese dressing. Perfect for quick lunches or light dinners, this salad balances protein, crunch, and creaminess in every bite.

Ingredients

  • Romaine lettuce, chopped
  • Cooked chicken breast, diced
  • Crispy bacon strips, chopped
  • Hard-boiled eggs, sliced
  • Ripe avocado, diced
  • Cherry tomatoes, halved
  • Blue cheese crumbles
  • Green onions, thinly sliced
  • Mayonnaise (½ cup)
  • Sour cream (¼ cup)
  • Crumbled blue cheese (½ cup)
  • Fresh lemon juice (1 tablespoon)
  • Garlic powder (¼ teaspoon)
  • Worcestershire sauce (1 teaspoon, optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Ingredients (15 minutes): Wash and dry romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
  2. Cook and Chop Proteins (10 minutes): If not pre-cooked, season chicken breasts with salt and pepper and pan-sear over medium heat for 6-7 minutes per side until cooked through. Let rest and dice. Cook bacon strips in a skillet until crispy, about 8 minutes, then drain and chop.
  3. Prepare Eggs and Veggies (10 minutes): Hard-boil eggs by boiling for 9-10 minutes, then cool in ice water before peeling and slicing. Dice avocado just before assembling. Halve cherry tomatoes and thinly slice green onions.
  4. Make the Creamy Blue Cheese Dressing (5 minutes): In a small bowl, combine mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, Worcestershire sauce (if using), salt, and pepper. Whisk gently to keep some blue cheese chunks intact.
  5. Assemble the Salad (5 minutes): Arrange chicken, bacon, eggs, avocado, cherry tomatoes, and green onions in rows over the romaine lettuce. Sprinkle remaining blue cheese crumbles on top.
  6. Dress and Serve: Drizzle the blue cheese dressing over the salad just before serving or serve on the side. Toss lightly if desired.

Notes

Dry lettuce thoroughly to avoid soggy salad. Cook bacon slowly over medium heat for best crispness. Whisk dressing gently to keep blue cheese chunks. Add avocado and dressing just before serving to keep freshness. Dressing can be made 2-3 days ahead and stored in the fridge.
