  • 1 cup (240 ml) small-curd cottage cheese (full-fat or low-fat)
  • 1 medium fresh orange, peeled and segmented (navel or blood orange)
  • 1 oz (28 g) dark chocolate, roughly chopped (70% cocoa or higher)
  • 1 tsp (5 ml) honey or maple syrup (optional)
  • ½ tsp (2.5 ml) vanilla extract (optional)
  • 1 tbsp (15 g) chopped nuts or seeds (optional, toasted almonds, walnuts, or chia seeds)

Instructions

  1. Prepare the orange by peeling carefully, removing all white pith, then segmenting by cutting between membranes. Set aside.
  2. In a mixing bowl, add 1 cup cottage cheese. Stir gently to keep some texture. Add vanilla extract and honey or maple syrup if using. Mix until creamy.
  3. Spoon the cottage cheese mixture into a serving bowl.
  4. Arrange the orange segments evenly on top of the cottage cheese.
  5. Sprinkle the roughly chopped dark chocolate over the bowl.
  6. If using nuts or seeds, toast them lightly in a dry pan over medium heat for 2-3 minutes until fragrant, then sprinkle on top.
  7. Serve immediately for best texture and flavor. If preparing ahead, keep orange and chocolate separate until serving.
