Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
  2. In a large bowl, cream the softened butter and powdered sugar together until light and fluffy (about 2 minutes). Add the vanilla extract and mix until combined.
  3. Gradually add the flour and salt to the butter mixture. Mix on low speed until the dough just comes together. Be careful not to overmix—it should be soft but not sticky.
  4. Gently fold in the rainbow sprinkles, dispersing them evenly throughout the dough.
  5. Lightly flour a clean surface and roll out the dough to about 1/4-inch thick. Use a cookie cutter to cut out shapes and transfer them to the prepared baking sheets, leaving about 1 inch between cookies.
  6. Chill the cut dough in the refrigerator for 10 minutes to help the cookies hold their shape. Bake for 10-12 minutes, or until the edges are just starting to turn golden. Cool completely on a wire rack.
  7. While the cookies cool, beat the cream cheese, powdered sugar, and vanilla extract together in a bowl until smooth and creamy.
  8. Pair the cookies by size. Spread a thin layer of filling on the flat side of one cookie and sandwich it with another. Repeat with the remaining cookies.
