  • 1 cup (120g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (120ml) honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: ½ cup (75g) raisins, chocolate chips, chopped nuts, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, whisk together oats, flour, cinnamon, baking powder, and salt. Set aside.
  3. In a separate bowl, beat softened butter with honey until smooth and creamy.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. The dough will be thick and sticky.
  6. Fold in optional mix-ins like raisins, chocolate chips, or chopped nuts.
  7. Use a cookie scoop or tablespoon to drop rounds of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a cooling rack. Allow them to cool completely before serving.

Notes

Chill the dough for 30 minutes if it feels too sticky. Experiment with add-ins like dried fruit, nuts, or chocolate chips to customize the flavor.
