  • 1 cup (90g) old-fashioned oats
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together all-purpose flour, old-fashioned oats, baking soda, and salt. Set aside.
  3. In another mixing bowl, beat unsalted butter, brown sugar, and granulated sugar until creamy and smooth, about 2-3 minutes.
  4. Add vanilla extract, freshly grated lemon zest, and fresh lemon juice to the wet mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Add milk to bind the dough. If the dough feels too dry, add an extra teaspoon of milk at a time until it comes together nicely.
  7. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set. Avoid overbaking.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
