  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1/3 cup (80ml) pure maple syrup
  • 1/2 cup (120g) pure pumpkin puree
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup (90g) chocolate chips, chopped nuts, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper or silicone baking mats.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  5. Beat in egg, maple syrup, pumpkin puree, and vanilla extract until fully combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  7. If desired, gently fold in chocolate chips, chopped nuts, or dried cranberries.
  8. Use a cookie scoop or tablespoon to drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 12-14 minutes, or until the edges are lightly golden and the tops are set.
  10. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
