  • 1 large egg

  • ½ teaspoon salt
  • 1 cup (150 g) maraschino cherries, drained and chopped
  • 1 cup (150 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cream together 1 cup (225 g) of softened unsalted butter, ¾ cup (150 g) of granulated sugar, and ½ cup (100 g) of brown sugar until light and fluffy. This should take about 2-3 minutes using a hand or stand mixer.
  3. Add 1 large egg and 1 ½ teaspoons of vanilla extract to the butter mixture. Beat until fully combined.
  4. In a separate bowl, whisk together 2 ½ cups (315 g) of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix—this will help keep the cookies soft.
  6. Gently fold in 1 cup (150 g) of semi-sweet chocolate chips and 1 cup (150 g) of chopped maraschino cherries. Make sure the cherries are well-drained and patted dry to avoid adding extra moisture to the dough.
  7. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set and golden brown. The centers should still look slightly underdone—they’ll firm up as they cool.
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
