  • 45 large russet potatoes, peeled and diced into bite-sized chunks
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 68 strips of bacon, cooked and crumbled
  • Green onions, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Peel and dice 4-5 large russet potatoes into bite-sized chunks, about 1-inch in size.
  3. Cook 6-8 strips of bacon in a skillet over medium heat until crispy. Remove, let cool, and crumble into small pieces. Set aside.
  4. In a large mixing bowl, combine melted butter, heavy cream, sour cream, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.
  5. Add the diced potatoes to the creamy mixture and toss to coat evenly.
  6. Spread the coated potatoes evenly in the greased baking dish.
  7. Sprinkle shredded cheddar cheese and grated Parmesan cheese on top of the potatoes.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and continue baking for another 20-25 minutes, or until the top is golden brown and bubbly.
  10. Sprinkle crumbled bacon and chopped green onions over the top. Serve warm.
