  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour

  • 1/2 teaspoon salt
  • 1/2 cup fresh raspberries
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking.
  2. In a large mixing bowl, cream together 1/2 cup (1 stick) of softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy. This step should take about 2-3 minutes.
  3. Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture. Beat until well combined.
  4. In a separate bowl, whisk together 1½ cups (190g) of all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to keep the cookies soft and tender.
  6. Gently fold in 1/2 cup of fresh raspberries and 1/2 cup of white chocolate chips (if using). Be gentle to avoid crushing the berries, but don’t worry if they break a little—it’ll add a nice swirl of color!
  7. Scoop the dough into small balls (about 1½ tablespoons) and place them on the prepared baking sheets, spacing them about 2 inches apart.
