  • 2 firm apples (Honeycrisp, Fuji, or Granny Smith), cored and sliced into thin wedges
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • Optional toppings: chopped pecans, walnuts, or dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Peel the sweet potatoes and slice them into even cubes, about 1-inch in size.
  3. Core the apples and slice them into thin wedges. Peeling is optional.
  4. In a large bowl, combine 2 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of nutmeg, and a pinch of salt.
  5. Add the sweet potatoes and apple slices to the bowl of spices. Drizzle 2 tablespoons of olive oil and 2 tablespoons of melted butter over them. Toss until they’re evenly coated.
  6. Arrange the sweet potatoes and apples in a single layer on the prepared baking sheet. Avoid overcrowding to ensure even roasting.
  7. Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping halfway through. The sweet potatoes should be tender and the apples caramelized.
  8. Optional: Sprinkle chopped pecans or walnuts over the roasted mixture during the last 5 minutes of cooking for added crunch.
  9. Remove from the oven and let cool for a few minutes. Serve warm and garnish with additional cinnamon or dried cranberries if desired.
