  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and dry the sweet potatoes. Slice into rounds about 1/4 inch thick (6 mm).
  3. Arrange the slices on the baking sheet in a single layer. Drizzle with olive oil and season with salt and pepper. Flip the rounds and repeat on the other side.
  4. Place the baking sheet in the oven and roast for 20 minutes. Flip the rounds and roast for an additional 15-20 minutes, or until golden and tender.
  5. Remove the sweet potatoes from the oven. Drizzle with honey, sprinkle with crumbled feta, and finish with fresh herbs.
  6. Transfer to a serving platter and enjoy warm or at room temperature.

Notes

For a dairy-free option, omit the feta and use toasted nuts. Adjust the honey drizzle to your taste for sweetness. Add herbs at the last moment to preserve their vibrant color and flavor.
