  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly with olive oil.
  2. Peel and cube the sweet potatoes into 1-inch pieces. Place them in a large mixing bowl.
  3. Drizzle the olive oil over the sweet potatoes. Add the minced garlic, grated parmesan, salt, pepper, and Italian seasoning. Toss everything until the potatoes are evenly coated.
  4. Arrange the sweet potato cubes in a single layer on the prepared baking sheet. Make sure there’s space between the pieces for even roasting.
  5. Place the baking sheet in the oven and roast for 25-30 minutes, flipping the potatoes halfway through. You’ll know they’re ready when the edges are golden-brown and crispy.
  6. Transfer the roasted sweet potatoes to a serving dish and garnish with extra parmesan if desired. Serve warm.
