Irresistible Sausage & Sweet Potatoes Recipe with Honey Garlic Sauce

  • 2 large sweet potatoes, peeled and diced into bite-sized cubes
  • 45 links of smoked or Italian sausage
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them evenly on the baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and slightly crispy.
  3. While the sweet potatoes roast, heat a large skillet over medium heat. Add the sausage links and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and slice into bite-sized pieces.
  4. In the same skillet, reduce the heat to low and add the minced garlic. Sauté for 1-2 minutes until fragrant, then stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Add the roasted sweet potatoes and sliced sausage to the skillet with the sauce. Toss everything together until well coated and heated through.
  6. Transfer to a serving dish, garnish with fresh parsley if desired, and serve warm.
