Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, garlic powder, onion powder, chili flakes (if using), salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into 1-inch meatballs, about 20-24 pieces, ensuring uniform size.
  3. Heat olive oil in a large skillet over medium heat. Cook meatballs for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Drain on paper towels.
  4. While meatballs cook, rinse and chop veggies: dice tomatoes, slice black olives, chop green onions, and prepare corn kernels. Have guacamole and refried beans ready.
  5. In a serving bowl, spread refried beans evenly as the first layer.
  6. Add guacamole layer, smoothing gently.
  7. Sprinkle corn kernels evenly over guacamole.
  8. Scatter diced tomatoes on top of corn.
