Irresistible Sugar Cookie Cheesecake

A festive dessert that combines buttery sugar cookies and creamy cheesecake filling, perfect for holidays and special occasions.

  • 1 ½ cups crushed sugar cookies
  • ¼ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup crushed sugar cookies (for sprinkling)
  • Festive holiday sugar cookies (whole or cut-out shapes for decoration)
  • Optional: whipped cream for garnish

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine the crushed sugar cookies and melted butter. Press the mixture firmly into the bottom of your springform pan. Bake for 8-10 minutes, then let it cool.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract and sour cream until fully combined.
  3. Pour the cheesecake filling over the cooled crust, smoothing out the top with a spatula.
  4. Place the springform pan in a water bath (a roasting pan with hot water that reaches halfway up the sides of the pan). Bake for 60-70 minutes, or until the center is slightly jiggly but set.
  5. Remove the cheesecake from the oven and let it cool at room temperature for an hour. Then, refrigerate for at least 4 hours or overnight.
  6. Before serving, sprinkle crushed sugar cookies over the top and decorate with festive holiday sugar cookies. Optional: pipe whipped cream around the edges for added flair.

Notes

Ensure all ingredients are at room temperature for a smooth filling. Use a water bath to prevent cracks in the cheesecake. Decorate just before serving to keep cookies fresh.
