  • 1 loaf of hearty bread (sourdough or French bread), cut into 1-inch cubes and toasted
  • 4 tablespoons unsalted butter (or dairy-free margarine)
  • 1 medium onion, finely chopped
  • 3 celery stalks, diced
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cups chicken or vegetable broth
  • 2 large eggs
  • Salt and pepper to taste
  • Optional: 1/2 cup chopped pecans
  • Optional: 1/2 cup dried cranberries
  • Optional: 1/2 cup cooked sausage, crumbled

Instructions

  1. Preheat the oven to 300°F (150°C). Spread bread cubes on a baking sheet and toast for 10-15 minutes until lightly crispy. Set aside to cool.

  3. Stir in sage, thyme, and parsley, cooking for an additional minute. Remove from heat.
  4. In a large bowl, whisk together broth and eggs until well combined.
  5. Add toasted bread cubes to the bowl. Pour sautéed vegetables and herbs over the top, then mix gently until the bread is evenly coated.
  6. Season with salt and pepper to taste, then transfer the mixture to a greased 9×13-inch baking dish.
  7. Cover the dish with aluminum foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for an additional 15-20 minutes until the top is golden and crispy.
