  • ½ cup (75g) fresh strawberries, sliced
  • ½ cup (75g) fresh blueberries
  • 2 tablespoons (15g) chopped nuts (almonds or walnuts)
  • ½ teaspoon (2.5ml) vanilla extract (optional)
  • 1 teaspoon (2g) lemon zest (optional)
  • A few fresh mint leaves for garnish

Instructions

  1. Rinse the strawberries and blueberries under cool water. Slice the strawberries into thin pieces and pat dry with a paper towel.
  2. Optional: Place 1 cup of small-curd cottage cheese in a blender or food processor and pulse 3-5 times until creamy but still textured.
  3. Transfer the cottage cheese to a mixing bowl if blended. Add ½ teaspoon vanilla extract and 1 teaspoon lemon zest. Stir gently to combine.
  4. Spoon the cottage cheese mixture into a serving bowl. Top evenly with sliced strawberries and blueberries.
  5. Sprinkle 2 tablespoons of chopped nuts over the top.
  6. Warm the honey slightly and drizzle 2 tablespoons over the entire bowl.
  7. Garnish with a few fresh mint leaves. Serve immediately or chill for 10 minutes if preferred cooler.
