A quick, tasty, and healthy cottage cheese strawberry bowl perfect for Valentine’s Day or any nourishing breakfast or snack. Creamy whipped cottage cheese layered with fresh strawberries, natural sweetener, and crunchy toppings.

  • 1 cup (240 ml) cottage cheese (small-curd preferred)
  • 1 cup (150 grams) fresh strawberries, sliced
  • 1 tablespoon (15 ml) honey or maple syrup
  • ½ teaspoon (2.5 ml) vanilla extract
  • 1 teaspoon (5 grams) chia seeds (optional)
  • 2 tablespoons (15 grams) slivered almonds or chopped walnuts
  • A few fresh mint leaves, chopped (optional)
  • ½ teaspoon (1 gram) lemon zest

Instructions

  1. Rinse 1 cup (150g) of fresh strawberries under cold water. Pat dry and slice evenly into halves or quarters.
  2. In a medium bowl, add 1 cup (240ml) cottage cheese, 1 tablespoon (15ml) honey or maple syrup, and ½ teaspoon (2.5ml) vanilla extract. Whip with a hand mixer or whisk until fluffy and smooth, about 2-3 minutes.
  3. Spoon half of the whipped cottage cheese into a serving bowl. Layer half of the sliced strawberries on top. Sprinkle with 1 teaspoon (5g) chia seeds and 1 tablespoon (7.5g) slivered almonds or chopped walnuts.
  4. Repeat the layers with the remaining cottage cheese and strawberries.
  5. Sprinkle the top layer with remaining nuts and chia seeds. Grate ½ teaspoon (1g) lemon zest over everything. Scatter chopped fresh mint leaves on top if using.
  6. Serve immediately or cover and refrigerate for up to 2 hours. If chilled, bring to room temperature for about 10 minutes before serving.

Notes

Use small-curd cottage cheese for creamier texture. If cottage cheese is too thick, add a splash of milk or almond milk before whipping. Adjust sweetness with honey or maple syrup to taste. Frozen strawberries can be used if thawed and drained. For dairy-free, substitute cottage cheese with thick coconut or almond yogurt. Layer ingredients instead of mixing for best texture.
