  • ½ teaspoon cinnamon
  • ½ cup (75 g) fresh strawberries or raspberries, sliced
  • 2 tablespoons chopped nuts (almonds or pecans, optional)
  • 1 tablespoon dark chocolate shavings (optional)
  • Optional toppings: shredded coconut, mini marshmallows, or edible rose petals

Instructions

  1. In a medium bowl, combine 1 cup (225 g) of small-curd cottage cheese, 1 teaspoon of vanilla extract, and 2 tablespoons of honey or maple syrup. Stir gently but thoroughly until smooth and slightly creamy, about 2-3 minutes.
  2. Place 3-4 sugar cookies in a zip-top bag and crush into bite-sized crumbles using a rolling pin or hands, aiming for a mix of fine crumbs and small chunks, about 5 minutes.
  3. Spoon half of the cottage cheese mixture into a serving bowl or glass. Sprinkle half of the cookie crumbles evenly over the cottage cheese layer. Add about ¼ cup (37 g) sliced fresh strawberries or raspberries.
  4. Repeat the layers with the remaining cottage cheese and cookie crumbles.
  5. Sprinkle ½ teaspoon cinnamon evenly on top. Add 2 tablespoons chopped nuts and 1 tablespoon dark chocolate shavings if desired.
  6. Chill the bowl in the refrigerator for 10-15 minutes before serving to let flavors meld and soften the cookie crumble slightly.
