  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Pat chicken thighs dry with paper towels. Season both sides with salt and black pepper.
  2. Cut baby potatoes in half or quarters depending on size. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Brown chicken thighs skin-side down for 4-5 minutes until golden, then flip and cook 2-3 minutes. (Optional but recommended)
  4. In a mixing bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes if using.
  5. Spread baby potatoes evenly in the bottom of the crockpot.
  6. Place chicken thighs skin-side up on top of the potatoes.
  7. Pour the honey garlic sauce evenly over the chicken and potatoes, avoiding drowning the skin.
  8. Cover and cook on low for 6 hours or on high for 3 hours until chicken is tender and potatoes are soft but not mushy.
  9. For crispier skin, place chicken under a broiler for 3-5 minutes after cooking, watching closely.
  10. Garnish with chopped fresh parsley before serving.
  11. If sauce is too thin after cooking, transfer to a saucepan and simmer for 3-5 minutes until thickened, then pour back over chicken and potatoes.
