  • 3 cups cooked chicken, shredded (about 12 oz)
  • 1 (8 oz) bag Nacho Cheese Doritos, crushed and divided
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 3/4 cup ranch dressing
  • 2 cups shredded cheddar cheese, divided
  • 6 slices cooked bacon, crumbled
  • 1 cup canned corn, drained
  • 1/3 cup green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional toppings: extra green onions, chopped cilantro, extra ranch dressing

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Crush about two-thirds of the Doritos (roughly 6 oz) into bite-sized pieces and spread evenly on the bottom of the baking dish.
  3. In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, ranch dressing, 1 cup shredded cheddar cheese, corn, garlic powder, black pepper, half the crumbled bacon, and green onions. Mix well.
  4. Spoon the creamy chicken mixture evenly over the Doritos layer in the baking dish.
  5. Sprinkle the remaining 1 cup shredded cheddar cheese and the rest of the bacon evenly over the top.
  6. Crush the remaining Doritos (about 2 oz) and scatter evenly over the casserole (reserve a handful to add in the last 5 minutes for extra crunch, if desired).
  7. Cover the dish loosely with foil and bake for 25 minutes.
  8. Remove foil, add any reserved Doritos, and bake uncovered for another 10-15 minutes until the top is golden and cheese is melted. For extra crispy chips, broil for 1-2 minutes at the end, watching closely.
  9. Let the casserole cool for 5-10 minutes before serving. Garnish with extra green onions, cilantro, or a drizzle of ranch if desired.

Notes

For best results, use freshly shredded cheese for extra creaminess. Don’t over-crush the Doritos—leave some larger pieces for crunch. Let the casserole rest before serving to help it set. You can assemble ahead and refrigerate, adding the top Doritos layer just before baking. For a gluten-free version, use gluten-free soup and Doritos. Leftovers reheat well and can be frozen.
