A crowd-pleasing, cheesy casserole that combines spicy Doritos, savory taco filling, beans, and gooey cheese for the ultimate comfort food. Perfect for busy weeknights, parties, or game nights, this Tex-Mex inspired bake is customizable and irresistibly crunchy.

  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning (about 1 oz, mild or spicy)
  • 1 cup salsa (chunky or smooth)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup sour cream
  • 1 small onion, diced (about 1/2 cup)
  • 1 clove garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 large bag (9.75 oz) Nacho Cheese Doritos, roughly crushed (reserve about 1 cup for topping)
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • Extra sour cream or salsa, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook ground beef for 5-7 minutes until browned and crumbly. Drain excess fat if needed.
  3. Add diced onion and minced garlic to the skillet. Cook for 2-3 minutes until softened and fragrant.
  4. Stir in taco seasoning and salsa. Add black beans and sour cream, mixing until creamy. Simmer for 2-3 minutes. Add a splash of water if too dry.
  5. Crush Doritos into bite-sized pieces, reserving 1 cup for topping.
  6. Layer half the crushed Doritos in the bottom of the baking dish.
  7. Spread the taco meat mixture evenly over the Doritos.
  8. Sprinkle half of the cheddar and Monterey Jack cheese blend over the meat mixture.
  9. Add the remaining Doritos on top of the cheese layer.
  10. Finish with the rest of the shredded cheese.
  11. Bake for 20-25 minutes, until cheese is bubbly and edges are golden. Cover with foil for half the baking time if you prefer a softer topping.
  12. Remove from oven and sprinkle with reserved Doritos, chopped tomatoes, olives, green onions, and cilantro.
  13. Let casserole rest for 5-10 minutes before serving. Garnish with extra sour cream or salsa if desired.

Notes

For extra crunch, add a handful of Doritos on top just before baking. Shred your own cheese for best melt. Customize with jalapeños, green chilies, or swap ground beef for chicken or plant-based crumbles. Add toppings after baking for freshness. For gluten-free, use certified GF Doritos and taco seasoning.
