  • 6 cups (150g) sturdy, thick-cut tortilla chips
  • 1 pound (450g) peeled and deveined medium shrimp
  • 4 tablespoons (60g) unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 2 cups (200g) shredded sharp cheddar or Mexican cheese blend
  • 1 cup (150g) pico de gallo (fresh salsa with tomatoes, onions, jalapeños, cilantro)
  • 1 small jalapeño, thinly sliced (optional)
  • 2 stalks green onions, chopped
  • Sour cream or crema, for drizzling or dolloping

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. Heat butter in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add shrimp and cook 2 minutes per side until pink and opaque.
  4. Stir in lemon juice and red pepper flakes if using. Toss to coat shrimp and remove from heat.
  5. Preheat oven to 375°F (190°C).
  6. Spread tortilla chips evenly on a rimmed baking sheet or oven-safe dish.
  7. Sprinkle shredded cheese evenly over the chips.
  8. Spoon cooked shrimp and garlic lemon sauce evenly over the cheese and chips.
  9. Bake for 8-10 minutes until cheese is melted and bubbly.
  10. While baking, chop jalapeño, slice green onions, and prepare pico de gallo.
  11. Remove nachos from oven and sprinkle with jalapeños, green onions, and parsley.
  12. Add dollops or drizzle of sour cream or crema on top.
  13. Serve immediately for best crunch and flavor.

Avoid overcrowding the pan when cooking shrimp to prevent steaming. Layer toppings strategically to keep chips crunchy. Use fresh lemon juice for best flavor. For extra cheesy layers, layer chips, cheese, and shrimp twice before baking. To keep chips extra crispy, warm the baking sheet before adding chips.
