  • 2 cups cooked chicken, shredded or chopped (rotisserie chicken recommended)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked crisp and crumbled
  • 23 green onions, thinly sliced
  • Optional: chopped jalapeños
  • Optional: chopped fresh parsley or dill
  • Optional: hot sauce or pinch of cayenne

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place cream cheese in a mixing bowl and let it sit at room temperature for 20-30 minutes to soften. (Or microwave in 10-second bursts until just soft.)
  3. Add sour cream to the softened cream cheese. Beat with a hand mixer or whisk until smooth and fluffy, about 1-2 minutes.
  4. Sprinkle in ranch seasoning mix and mix until fully incorporated.
  5. Fold in cooked chicken and 3/4 cup shredded cheddar cheese. Mix gently to combine.
  6. Stir in half of the crumbled bacon (3 strips) and half of the sliced green onions. (Add optional jalapeños or hot sauce if desired.)
  7. Scoop the mixture into a greased 8×8-inch baking dish and spread evenly.
  8. Top with remaining 3/4 cup cheddar cheese and the rest of the bacon.
  9. Bake for 20-25 minutes, or until bubbly around the edges and golden on top.
  10. Let the dip sit for 5 minutes before serving. Garnish with remaining green onions and fresh herbs if desired.

Let cream cheese come to room temperature for the smoothest dip. Use freshly cooked bacon for best flavor and crunch. For a gluten-free version, ensure your ranch mix is gluten-free.
