A quick and easy recipe combining buttery garlic shrimp scampi with crispy nachos, perfect for parties or weeknight gatherings. This flavorful dish layers sautéed shrimp over cheesy tortilla chips for a satisfying and indulgent treat.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 2 cups shredded mozzarella and cheddar cheese blend
  • About 6 cups tortilla chips
  • 2 green onions, thinly sliced
  • 1 medium fresh tomato, diced
  • Optional extras: sliced jalapeños, avocado chunks, sour cream, garlic aioli

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil and 2 tablespoons butter in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add shrimp, sprinkle with salt and red pepper flakes if using. Cook shrimp 2-3 minutes per side until pink and opaque. Squeeze in lemon juice, stir in remaining butter, and sprinkle chopped parsley. Remove from heat.
  3. Spread half of the tortilla chips evenly on a baking sheet or oven-safe dish. Sprinkle half of the shredded cheese over the chips. Add half of the shrimp scampi mixture evenly on top. Repeat with remaining chips, cheese, and shrimp.
  4. Bake for 8-10 minutes until cheese is melted and bubbly. Watch carefully to avoid burning the chips.
  5. Remove from oven and garnish with diced tomatoes, green onions, and any optional toppings like jalapeños or avocado. Serve immediately with sour cream or your favorite dipping sauce.

Notes

Use thick, sturdy tortilla chips to prevent sogginess. Add butter off the heat at the end to avoid sauce separation. Keep shrimp warm if cooked ahead by covering skillet with foil. Let baked nachos rest 2 minutes before serving for easier scooping. For gluten-free, verify chips and cheese labels. Variations include adding jalapeños for spice or swapping shrimp for mushrooms for a vegetarian option.
