Magic Color-Changing Lemonade

A mesmerizing and refreshing lemonade that changes color from blue to purple-pink thanks to butterfly pea flower tea and fresh lemon juice. Perfect for summer gatherings and easy to make.

Ingredients

  • 1 tablespoon dried butterfly pea flowers or 1 tea bag
  • 4 cups (1 liter) water
  • 1 cup (240 ml) fresh lemon juice (about 46 medium lemons)
  • ½ to ¾ cup (100150 grams) granulated sugar or honey, adjust to taste
  • Ice cubes, as needed for serving
  • Fresh lemon slices and mint sprigs for garnish

Instructions

  1. Bring 4 cups (1 liter) of water to a boil. Remove from heat and add 1 tablespoon of dried butterfly pea flowers or 1 tea bag. Let steep for 10 minutes until the water turns deep blue.
  2. Strain the tea through a fine mesh strainer into a pitcher to remove the flowers.
  3. While the tea is still warm, stir in ½ to ¾ cup (100-150 grams) of granulated sugar or honey until fully dissolved. Adjust sweetness to taste.
  4. Let the sweetened tea cool to room temperature, then refrigerate for about 30 minutes to chill. Add ice cubes to speed cooling if desired.
  5. Juice 4-6 medium lemons to get about 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp.
  6. Slowly pour the fresh lemon juice into the chilled blue tea. The color will instantly shift from blue to purple-pink. Stir gently to blend flavors.
  7. Serve over ice cubes in clear glasses and garnish with lemon slices and mint sprigs.

Notes

Use organic butterfly pea flowers for best color. Fresh lemon juice gives the brightest color change. Stir gently after adding lemon juice to preserve the color swirl. Store in refrigerator up to 2 days and stir gently before serving. Avoid freezing. For vegan sweetener alternatives, use agave or maple syrup. Can add herbs or make sparkling by adding club soda.
