Tender, perfectly roasted carrots coated in a luscious maple-Dijon glaze that balances sweet and tangy flavors. A quick and easy side dish perfect for any occasion.

Ingredients

Scale
  • 2 pounds carrots, peeled and cut into sticks or chunks
  • 2 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves
  • Optional garnish: chopped parsley or sesame seeds

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Peel and cut the carrots into sticks or chunks, ensuring they’re roughly the same size for even cooking.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, salt, black pepper, and thyme.
  4. Place the carrots in a large mixing bowl and pour the glaze over them. Toss until all the carrots are evenly coated.
  5. Spread the carrots in a single layer on the prepared baking sheet. Ensure they are not overcrowded.
  6. Bake the carrots for 25 minutes, flipping them halfway through to ensure even caramelization. They should be tender and have golden edges when done.
  7. Optional: Sprinkle chopped parsley or sesame seeds over the carrots before serving for added color and texture.

Notes

[‘Cut carrots evenly to ensure even cooking.’, ‘Taste the glaze and adjust sweetness or tanginess to your preference.’, ‘Use fresh carrots for better flavor and texture.’, ‘Spread carrots evenly on the baking sheet to prevent steaming.’, ‘You can use honey or agave nectar as a substitute for maple syrup.’]
