Miso Glazed Roasted Carrots

A quick and easy side dish featuring sweet roasted carrots caramelized with a savory miso glaze, perfect for Thanksgiving or any meal.

  • 1.5 pounds carrots, peeled and cut into evenly sized sticks or rounds
  • 3 tablespoons miso paste (white or yellow preferred)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • Freshly ground black pepper, to taste
  • 1 tablespoon toasted sesame seeds (optional)
  • Chopped fresh parsley or cilantro (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 1.5 pounds of carrots into uniform sticks or rounds, about 1/2 inch thick.
  3. In a medium mixing bowl, whisk together 3 tablespoons miso paste, 2 tablespoons maple syrup, 2 tablespoons olive oil, 1 tablespoon rice vinegar, minced garlic, and grated ginger (if using) until smooth and slightly thick.
  4. Add the carrots to the bowl with the glaze and toss thoroughly to coat each piece.
  5. Spread the glazed carrots in a single layer on a rimmed baking sheet lined with parchment paper or lightly greased.
  6. Roast for 20-25 minutes, flipping the carrots halfway through (around 12 minutes) to promote even browning.
  7. Check tenderness with a fork; carrots should be soft but not mushy. Roast an additional 5 minutes if needed.
  8. Remove from oven and sprinkle with toasted sesame seeds and fresh herbs if desired. Add freshly ground black pepper.
  9. Serve warm, fresh from the oven or at room temperature.

Notes

If miso paste is very thick, thin it slightly with a teaspoon of warm water before mixing. Avoid overcrowding the pan to prevent steaming. Flip carrots halfway through roasting for even caramelization. Watch the glaze near the end to avoid burning; tent with foil if needed. Maple syrup can be substituted with honey or agave nectar. For gluten-free, use certified gluten-free miso paste.
