  • 3 medium ripe bananas, mashed
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅓ cup (75 g) unsalted butter, melted and slightly cooled
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60 ml) sour cream
  • ¾ cup (135 g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat the oven to 350°F (175°C) and line your muffin tin with liners or grease it lightly.
  2. Mash the ripe bananas in a medium bowl using a fork or potato masher until mostly smooth with a few small lumps.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. In the banana bowl, stir in granulated sugar, brown sugar, melted butter, egg, vanilla extract, and sour cream until just combined.
  5. Gently fold the dry ingredients into the wet banana mixture until just combined; a few dry spots are okay.
  6. Fold in the chocolate chips, reserving a few to sprinkle on top.
  7. Divide the batter evenly into the prepared muffin cups, filling each about ¾ full.
  8. Bake for 20 to 25 minutes, checking at 20 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter.
  9. Cool muffins in the pan for 5 minutes, then transfer to a cooling rack to maintain crispy edges.

Notes

Do not overmix the batter to avoid dense muffins. Use melted butter for crispy edges. Let muffins cool on a wire rack to keep edges crisp. For gluten-free, use a 1-to-1 gluten-free baking flour. For dairy-free, substitute butter with coconut oil and sour cream with dairy-free yogurt.
