  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ½ cup (120ml) whole milk, at room temperature
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 cup (150g) fresh blueberries, gently tossed in 1 teaspoon flour
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan with butter or non-stick spray. Sprinkle a little flour over the buttered surface for extra release.
  2. In a large bowl, whisk together 2 cups (250g) all-purpose flour, 1 ½ teaspoons baking powder, ½ teaspoon salt, and ¾ cup (150g) granulated sugar.
  3. Gently toss 1 cup (150g) fresh blueberries with about 1 teaspoon of flour to prevent sinking. Set aside.
  4. In a separate bowl, whisk 2 large eggs, ½ cup (120ml) whole milk, ½ cup (115g) melted unsalted butter (cooled), 2 tablespoons fresh lemon juice, zest of 1 lemon, and 1 teaspoon vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined, being careful not to overmix.
  6. Carefully fold in the floured blueberries without breaking them.
  7. Pour the batter evenly into the prepared loaf pan and smooth the top with a spatula.
  8. Sprinkle about 1 tablespoon of granulated sugar evenly over the top of the batter to create a crispy crust.
  9. Bake for 50-60 minutes, checking at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

To prevent blueberries from sinking, toss them in flour before folding into batter. Use room temperature ingredients for better texture. Sprinkle sugar on top before baking for a crispy crust. If crust browns too fast, cover with foil. Let bread cool fully before slicing to maintain moist crumb and crisp crust.
