Perfect Bourbon Sweet Potato Pie

  • 2 large or 3 medium-sized sweet potatoes, roasted and mashed (about 2 cups)
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup heavy cream
  • 23 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 unbaked pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.
  2. Wash and prick the sweet potatoes with a fork, then roast them on the prepared baking sheet for 45-60 minutes, or until tender.
  3. Roll out the pie dough if homemade, or place the store-bought crust in a 9-inch pie dish. Trim the edges and crimp them for a decorative finish. Chill the crust while preparing the filling.
  4. In a large mixing bowl, scoop out the flesh of the roasted sweet potatoes (about 2 cups) and mash until smooth. Add melted butter, brown sugar, granulated sugar, eggs, heavy cream, bourbon, vanilla extract, and spices. Beat with a hand mixer or whisk until smooth and well combined.
  5. Pour the sweet potato mixture into the chilled pie crust, smoothing the top with a spatula.
  6. Reduce the oven temperature to 350°F (175°C). Place the pie on the center rack and bake for 50-55 minutes, or until the filling is set and the crust is golden brown. The center may jiggle slightly but will firm up as it cools.
  7. Let the pie cool at room temperature for at least 2 hours before slicing.
