  • 1 cup (227 g) unsalted butter, browned over medium heat
  • ½ cup (170 g) honey, preferably raw or local
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon sea salt
  • 1 teaspoon orange zest (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Position the rack in the middle to ensure even roasting.
  2. In a small saucepan, melt 1 cup unsalted butter over medium heat. Stir constantly until it foams and turns golden brown with a nutty aroma, about 5-7 minutes. Remove from heat.
  3. Stir in ½ cup honey, 2 tablespoons chopped rosemary, 2 tablespoons thyme leaves, 3 minced garlic cloves, 1 teaspoon black pepper, ½ teaspoon sea salt, and 1 teaspoon orange zest if using. Set aside.
  4. Place the ham on a rack in your roasting pan. If not pre-sliced, score the surface in a diamond pattern about ¼ inch deep to help the glaze soak in.
  5. Using a basting brush, generously coat the ham with about half of the brown butter honey herb mixture. Reserve the rest for basting during cooking.
  6. Roast the ham for about 1 hour, basting every 15 minutes with the remaining glaze. Tent loosely with foil if the glaze starts to darken too fast.
  7. Check the internal temperature with a thermometer; the ham is ready at 140°F (60°C). If no thermometer, look for bubbling glaze and caramelized surface.
  8. Remove the ham from the oven and let it rest for at least 10 minutes to lock in juices.
  9. Carve the ham thinly against the grain and serve warm.

Notes

If your ham is pre-glazed, reduce honey slightly to balance sweetness. Basting regularly is key to a shiny finish and deep flavor. Tent with foil if glaze caramelizes too quickly. Dried herbs can substitute fresh herbs at half quantity. Maple syrup can replace honey for a deeper sweetness.
