  • 3/4 cup (160g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (340g) semisweet chocolate chips or chunks

Instructions

  1. Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
  2. In a medium-sized bowl, whisk together all-purpose flour, baking soda, cornstarch, and salt. Set aside.
  3. In a large mixing bowl, beat softened unsalted butter, granulated sugar, and packed brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs, one at a time, followed by pure vanilla extract. Mix until smooth.
  5. Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined. Do not overmix.
  6. Using a spatula, gently fold in semisweet chocolate chips or chunks.
  7. Scoop out dough using a cookie scoop or tablespoon, forming balls roughly 1.5 inches in diameter. Space them about 2 inches apart on the prepared baking sheets.
  8. Bake for 8-10 minutes, or until the edges are lightly golden but the centers look slightly underbaked.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
