These stuffing balls combine savory turkey, herby stuffing, and sweet cranberries for a delicious holiday treat. Perfect for using leftovers or serving as appetizers, side dishes, or the main event.

  • 2 cups cooked turkey, shredded
  • 2 cups stuffing, prepared
  • 1/2 cup dried cranberries
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 1/4 cup chicken broth
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a large mixing bowl, combine the shredded turkey, prepared stuffing, dried cranberries, grated Parmesan cheese, and chopped parsley (if using).
  3. In a small bowl, whisk the eggs and chicken broth together. Pour the mixture into the large bowl with the stuffing and turkey.
  4. Season with a pinch of salt and black pepper, keeping in mind the seasoning already in your stuffing and turkey.
  5. Using a spatula or your hands, mix everything together until evenly combined. The mixture should be moist but firm enough to hold its shape.
  6. Using an ice cream or cookie scoop, portion out the mixture and roll into balls about 1½ inches in diameter. Place them on the prepared baking sheet, leaving a little space between each.
  7. Bake in the preheated oven for 20-25 minutes, or until the stuffing balls are golden brown and slightly crisp on the outside.
  8. Remove from the oven and let them cool for 5 minutes before serving.
