  • 2 lobster tails (68 oz each), thawed if frozen
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Lemon wedges, for serving
  • 4 tablespoons unsalted butter, softened (European-style butter preferred)
  • 3 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon chopped fresh parsley
  • Pinch of smoked paprika (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep the Lobster Tails (10 minutes): Using kitchen scissors, carefully cut down the center of the top shell on each lobster tail, stopping just before the tail fan. Gently pry the shell apart and lift the lobster meat, placing it on top of the shell. Season lightly with salt and pepper.
  2. Make the Garlic Butter Sauce (5 minutes): In a small bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, smoked paprika, and red pepper flakes if using. Mix well until smooth and fragrant.
  3. Brush Lobster with Butter (2 minutes): Generously brush the garlic butter mixture over the exposed lobster meat, making sure to coat all sides. Reserve a tablespoon or so for basting later.
  4. Broil the Lobster (8–10 minutes): Place the lobster tails on a baking sheet under the broiler about 6 inches from the heat source. Broil for 4–5 minutes, then baste with reserved garlic butter. Continue broiling for another 4–5 minutes until the meat is opaque and slightly golden on top. Aim for an internal temperature of 135°F (57°C).
  5. Rest and Serve (2 minutes): Remove lobster tails from the oven and let them rest for a couple of minutes. Serve immediately with lemon wedges and extra garlic butter on the side.

Notes

Use softened butter (not melted or cold) for best flavor infusion. Keep lobster about 6 inches from broiler for even cooking. Watch closely to avoid overcooking. Rest lobster after cooking to lock in juices. For dairy-free option, substitute butter with olive oil or vegan butter and increase garlic.
