Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. Using a mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in egg, vanilla extract, and almond extract until fully combined.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until dough forms and no streaks of flour remain. Do not overmix.
  6. Wrap dough in plastic wrap and chill for at least 1 hour.
