  • 5 to 7 pounds bone-in ham, pre-cooked and scored (spiral-cut optional)
  • ½ cup honey (120 ml), raw or regular
  • 4 cloves garlic, minced fresh
  • 3 tablespoons soy sauce (45 ml), low-sodium preferred
  • 2 tablespoons Dijon mustard (30 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 2 tablespoons brown sugar (25 g), packed
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cloves (optional)
  • ¼ cup water (60 ml), to loosen glaze if needed

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. If ham is not pre-scored, use a sharp knife to cut shallow diagonal lines about 1/8 inch deep in a diamond pattern.
  3. In a small saucepan, combine honey, minced garlic, soy sauce, Dijon mustard, apple cider vinegar, brown sugar, black pepper, and optional ground cloves. Warm gently over medium heat, stirring occasionally until sugar dissolves and glaze is smooth (about 5 minutes). Remove from heat.
  4. Place the ham flat-side down in a roasting pan. Use a brush to apply a generous layer of glaze all over the ham, pushing it into the scored lines.
  5. Cover the ham loosely with aluminum foil to prevent drying out.
  6. Bake for 1 hour 15 minutes to 1 hour 30 minutes (about 15 minutes per pound). Every 20 minutes, remove foil and brush more glaze over the ham. If glaze thickens too much, stir in water 1 tablespoon at a time to loosen.
  7. Check internal temperature with an instant-read thermometer; it should reach 140°F (60°C).
  8. Remove from oven and let ham rest for 10-15 minutes before carving.

Apply glaze in layers every 20 minutes for best caramelization. Use shallow scoring to avoid drying out the ham. Rest ham after baking to keep slices juicy. Broil briefly at the end for extra caramelization if desired. Substitute tamari for soy sauce for gluten-free option. Add orange juice or bourbon to glaze for variations.
